Add the parsley, stevia, paprika, salt, dill, thyme, celery seed,and cayenne pepper. Sauté 1-2 minutes more. The remaining vegetable broth, reduce heat and simmer for 20-30 minutes covered. It makes a great side dish on the HCG diet. * For 2 servings of vegetables *

Recipe for Hearty Turkey Soup

If you want to make the soup base ahead, simply make it to the stage where you sieve it, then let the soup cool completely and keep it in an airtight container until you are ready to use it.

This is a very healthy recipe and the simple flavor of turkey, vegetables and herbs combine to make a heavenly soup, which will definitely lift your spirits. You will need:

1 turkey carcass
4 cups chopped turkey
3 chopped stalks celery plus leaves
1 bay leaf
2 tablespoons chopped fresh parsley
2 tablespoons vegetable oil
2 tablespoons unsalted butter
2 minced garlic cloves
1 peeled, chopped turnip
2 chopped onions
3 chopped carrots
1/2 teaspoon dried thyme
Salt and black pepper, to taste

How to make it:

Heat the vegetable oil in a soup pot over a moderate heat. Add half the carrots, celery, and onions. Cover the pot and cook the vegetables for five minutes, stirring them a few times. Add the turkey carcass and cover it with enough water to cover it. Turn the heat up to high and boil the turkey carcass.

Skim off any fat from the top of the water. Add the bay leaf, thyme, parsley, salt and pepper. Turn the heat down to low and simmer the turkey soup uncovered for two to four hours, adding water if you need to, to keep the turkey carcass covered. Sieve the soup and discard the solids. Let it sit for five minutes, then skim the fat off the top.

Melt the butter over a moderate heat in a soup pot and add the rest of the carrots, celery, onions, garlic, and turnips. Cover and cook the vegetables for six minutes, stirring a few times. Add two quarts of the soup base and the fresh parsley.

Bring the soup to a boil. Turn the heat down to low and simmer it until the vegetables are soft. This will take about an hour. Stir in the turkey meat in the last five minutes of the cooking time. Season the soup with salt and pepper to taste, and then serve it hot.

Roasted Asparagus Soup Recipe

2 1/2 lbs. thin asparagus, trimmed & cut into 2" pieces
2 leaks, white & light green parts only, cleaned and finely chopped
2 T. Olive Oil
salt & pepper to taste
2 1/2 C. vegetable broth
Chives for garnish

Preheat oven to 425 degrees F. In a heavy roasting pan, combine asparagus, leeks, olive oil, slat and pepper. Mix to combine.

Roast, stirring occasionally, for 30 to 35 minutes or until leeks are golden brown & asparagus are tender.

Transfer the vegetables to a blender and add the broth. Process until completely pureed, taste to adjust seasonings.

Pour soup into shot glasses & garnish with chives if desired.

Waldorf Salad Recipe

3-4 Granny Smith Apples
2 Celery stalks, thinly sliced
4 oz. walnut pieces or pecans chopped
Mixed greens if desired
French vinaigrette dressing

Cut a few slices of apple with the skin on for decoration and then peel and core the rest of the apple and cut into thin strips. Toss the apple slices in lemon juice to prevent apples from turning brown.

Add the chopped celery, apple slices, nuts and mixed greens and toss with French vinaigrette.

French Vinaigrette Dressing Recipe

2 tbs. Dijon mustard
2 tbs champagne vinegar
6 tbs. extra-virgin olive oil
Salt and fresh ground pepper to taste

Mix ingredients in a cruet and serve with salad.

2 finely chopped carrots
1 finely chopped onion
5 cups chicken broth
1 sliced leek (white part only)
2 sprigs fresh thyme
Salt and black pepper, to taste

How to make it:

Stir together the chicken broth and water in a big soup pot, then bring the mixture to a boil. Add the split peas, ham hocks, celery, thyme and half the parsley. Turn down the heat and simmer the soup for forty five minutes with the lid partially covering the pot.

Stir it every ten minutes. Melt the butter in a skillet over a moderate to high heat, and then saute the leek, garlic, onion, and carrots until soft. Transfer the vegetables into the soup pot. Add the spinach and simmer the soup, partially covered again, for half an hour.

Turn the heat off and take out the ham hocks. Take the meat off the bones and discard the bones as well as any fatty bits. Return the chopped meat to the pot. Adjust the seasoning, add the rest of the parsley, and serve hot.

2 - 16 oz packages of frozen stew vegetables

½ cup diced celery

½ cup diced onion

1 ½ tsp salt

½ tsp dried thyme

¼ tsp pepper

¼ tsp garlic powder

½ cup milk

4 frankfurters (hot dogs) cut into ½ inch pieces

5 tbsp flour

5 tbsp butter, softened

In a large saucepan, combine the first seven ingredients. Cover with water and bring to a boil. Reduce heat, cover and simmer about 10 minutes until vegetables are tender. Add milk and frankfurters; bring to boil again. Blend flour and butter and add to boiling stew, stirring constantly until thickened. Serves 6.

Serve in a bowl with 2 cups of beef broth and 2 Melba toast. *Makes 1 vegetable serving*

The reason I love this so much is because it has lots of flavor. I love onions and I love garlic and this provided a ton of flavor for me that satisfied my taste and hunger levels while acting as a vegetable serving.

Green Onion Soup

Ingredients

10 green onions
2 cups vegetable broth
1-2 tsp. liquid aminos
1 tsp. parsley
4 drops or 1 packet Stevia
1/2 tsp. paprika
1/2 tsp. salt
1/2 tsp. dill
1/2 tsp. thyme
1/8 tsp. cayenne or red pepper flakes
1/8 tsp. celery seed

Directions

Briefly steam the green onions until tender. Preheat saucepan over MED heat. Chop steamed green onions. In a saucepan, sauté the green onions in a small amount of vegetable broth for a couple of minutes. Add the parsley, Stevia, paprika, salt, dill, thyme, celery seed, and cayenne. Sauté 1-2 minutes more. Add remaining vegetable broth, reduce heat, cover and simmer 20-30 minutes. Makes a great side dish on the hCG Diet. *Makes 2 vegetable servings*

Ingredients:

1 Tabspn extra virgin olive oil
8 oz, or 3 cups, sliced mushrooms
1 onion, chopped
1 garlic clove, minced
1/4 tspn pepper
1/4 tspn salt
1/2 tspn oregano, or any fresh herb you prefer
10 oz, or 1 bag, fresh spinach, chopped
1/4 cup milk, preferably reduced fat or skim
1/2 cup feta cheese, crumbled, preferably reduced fat
6 eggs
2 tomatoes, sliced

Method:

Add oil to non-stick ovenproof pan, and over a medium heat, cook mushrooms, onion, garlic, salt, pepper, and herbs. Stir to prevent sticking for approximately 8 minutes, until all liquid is removed.
Add spinach, cover, cook for about 5 minutes until spinach is just wilted.
Whisk eggs in mixing bowl. Add cheese and eggs to pan containing cooked vegetables and stir gently to mix. Turn heat to low. Place sliced tomato on top and cook uncovered for about 10 minutes, until only slight amount of juice remains.
Place under grill for 3-5 minutes until set.
Slice and serve with salad or steamed fresh seasonal vegetables drizzled with a little extra virgin olive oil.

Roasted Mediterranean Style Leg of Lamb With Artichokes. (Serves 10.)

This is a great example of a Mediterranean recipe, featuring such traditional Mediterranean foods as lamb, garlic, and artichokes.

Ingredients:

4lb leg of lamb
1 tspn oregano, chopped finely
1 tspn pepper
2 tspn salt
1 garlic clove, minced
8 oz, or 1 cup of tomato passata
1 cup, or 250 ml, water
9 oz artichoke hearts, tinned, marinated, or frozen

Method:

Heat oven to 325º F.
Rub the combined oregano, pepper and salt into the lamb. Place lamb on rack in shallow baking pan. Bake in oven for 2 1/2 hours.
Remove lamb and baking rack from oven. Drain fat from baking juices and place lamb back in pan without the baking rack.
Combine garlic, passata, and water, and pour over lamb. Place sliced lemon over top of lamb. Place artichokes around lamb in baking dish.
Bake for another 30-60 minutes, basting occasionally with sauce, until meat thermometer reaches 175-180º F.
Serve with salad or roast vegetables, such as potatoes, pumpkin, and sweet potato.

Healthy Greek Salad. (Serves 4.)

Ingredients:

2 cucumbers, peeled and chopped or sliced
3 tomatoes, chopped
1 Spanish onion
4 teaspn fresh lemon juice
1/4 cup extra virgin olive oil
1 1/2 teaspn oregano
salt and pepper as desired
8 pitted Kalamata olives, chopped
1 cup feta cheese, reduced fat, crumbled

Method:

Combine cucumbers, tomatoes, and onion in appropriately sized salad bowl.
Combine lemon juice, olive oil, oregano, salt and pepper. Drizzle over salad.
Place feta cheese and olives decoratively on top.

Traditional Tabbouleh (Serves 4 as an accompaniment.)

Ingredients:

1/2 cup boiling water
1/4 cup bulgur
1 onion, finely chopped
5 tomatoes, chopped
1 cup chopped parsley
1/4 cup chopped fresh mint
juice of 1 lemon
2 teaspns extra virgin olive oil
pinch of salt if required

Method:

Add boiling water to bulgur in small bowl. Mix, then cover. Stand for about 60 minutes. Drain off any leftover water.
Combine remaining ingredients in a bowl. Add softened bulgur and mix well.

Conclusion.

You may have noticed that these Mediterranean Diet recipes use extra virgin olive oil. The reason? Extra virgin olive oil is made from the very first pressing of the olives, and as a consequence contains the very highest levels of anti-oxidants. Cabbage Soup Diet Recipes With 7 Day Diet Plans

The main course of this diet plan is cabbage soup. You can find many different recipes, cabbage soup diet and they all work very well. There is only one difference in spices and the quantity of coal in it. Here is my recipe with a week of dietFloor:

500 g of white cabbage;
170 g of carrots;
170 g of celery;
150 g of white onions;
150 g of green onions;
300 g of cauliflower;
300 g of tomatoes;
20 g of fresh garlic;
0.2 liters of tomato sauce, peeled;
0.1 liters of olive oil;
1.5 liters of water;
2 nut plant;
1 tablespoon coriander puree;
1 tablespoon cumin;
1 tablespoon curry powder;
2 dried red peppers;
2 bay leaves;
1teaspoon of soy sauce;
a bit of fresh ginger;

Mix all with water. Add coriander, cubes, bay leaves, finely chopped pepper and the remaining spices from the recipe. Cook soup until vegetables boiled.

It is allowed to eat as much soup as you want, there is no limit. You can add to soup the following products (in any amount, unless expressly stated):

1-Day: any fruit except bananas.
2-Day: green vegetables. For dinner - a boiled potato with Butter.
3 days: fruit and vegetables, but without potatoes.
4 days: fat-free milk or low-fat and a banana.
5 days: a piece of fish or skinless chicken and 6 tomatoes.
6-Day: chops with a green salad.
7-Day Natural rice with vegetables.

While the cabbage soup diet is necessary), drink plenty of water (without gas - at least 3 liters a day and tea without sugar. Alcohol is strictly forbidden during this diet

Baked Vegetables Recipes For a Healthy Diet

Vegetables are healthy. It revitalizes our immune system and other organs of the body. Here are healthy baked vegetable recipes you can try at home.

Easy Creamy Baked Asparagus
Ingredients:
¼ cup Peppercorn Ranch Dressing
½ cup RITZ Cheese Crackers, coarsely crushed
1 pound trimmed asparagus spears
2 tablespoon KRAFT Parmesan Cheese, shredded

Directions:
Heat the oven to 350oF. Cook asparagus in large pot of boiling water from 2 to 3 minutes. Drain when it becomes bright green. Add asparagus with dressing in 1 and ½ to 2-quarts baking bowl. Sprinkle with cheese and cracker crumbs. Bake for about 10 to 15 minutes. Wait until the cheese is lightly browned.

Baked Cabbage
Ingredients:
3 cup shredded red cabbage
3 tablespoon light brown sugar
1/4 cup seedless raisins
1/4 cup cider vinegar
½ thinly sliced red onion

Directions:
Heat the oven up to 450 degrees Fahrenheit. In a 2-quart shallow baking dish, mix vinegar and sugar. Stir until sugar is dissolved. Add and mix cabbage, onion, and raisins with vinegar and sugar. Cover and bake for 20 minutes. Stir after 10 minutes.

Herbed Grilled Vegetables
Ingredients:
¼ cup minced fresh herbs like basil, rosemary and oregano
1 small eggplant, slice into ¼ inch slices
½ teaspoon salt
1 red, green and yellow bell pepper, slice into ¼ inch slices
2 Italian squash, slice lengthwise and into ¼ inch pieces

Directions:
Combine herbs in a small bowl. Leave it for at least 3 hours. Place egg plant in a large strainer. Sprinkle salt into it. Let it drain for an hour. Remove the grill from barbecue and heat to medium. Spray grill with nonstick cooking spray. Lightly spray vegetables with cooking spray. Sprinkle it with herb mixture. Place grill on barbecue and cook for about 10 to 15 minutes. Wait until the grill is crisp-tender and lightly browned on both sides.

Glazed Carrots
Ingredients:
4 cups (8 medium) carrots, sliced in to ¼ slices
½ cup water
½ cup dry white wine
2 teaspoons margarine
1 tablespoon lemon juice
2 teaspoons brown sugar

Directions:
Cook the primary 5 ingredients in a large skillet over a medium heat for 12 to 15 minutes. See to it that the liquid has evaporated. Reduce heat from medium to low. Stir the lemon juice and brown sugar. Cook for 5 minutes. Occasionally stir it until the carrots are glazed.

Baked Penne with Roasted Vegetables
Ingredients:
1 yellow onion, peeled and sliced into 1 inch strips
1 pound penne pasta
¼ cup extra-virgin olive oil
1 teaspoon salt, divided
1 teaspoon freshly ground black pepper, divided
1 cup minced fontina cheese
1 and ½ cups thawed frozen peas
1/4 cup grated Parmesan, added with 1/3 cup for topping
½ cup shredded smoked mozzarella
1 tbsp dried Italian herb mix or herbs de Provence
2 tablespoons butter, slice into small pieces
2 red peppers, slice into 1 inch wide strips
2 medium-sized summer squash, slice into 1 inch cubes
3 cups marinara sauce
2 zucchini, slice into 1 inch cubes
Halve 4 cremini mushrooms

Directions:
Heat the oven up to 450F. On a baking pan, mix the squash, peppers, mushrooms, zucchini, and onions with dried herbs, ½ teaspoon salt, olive oil, and ½ teaspoon pepper. Bake until it becomes tender for 15 minutes. Then set aside. Cook pasta in boiling salted water for about 6 minutes. Make sure that it's just enough for it to soften a bit. Then drain. Put the drained pasta in a large bowl. Mix with peas, roasted vegetables, marinara sauce, cheeses, ½ teaspoon salt, and ½ teaspoon pepper. Set the pasta in a clean pan. Then top it with 1/3 cup Parmesan and butter pieces. Bake it for about 25 minutes until cheese melts.

Amish Soup Recipes

Good things come to those who wait! These two Amish soup recipes do take a little time to make, but are well worth it. Each use basic ingredients which aren't hard to find, and whole chicken.

Recipe #1 - AMISH CHICKEN NOODLE SOUP

3 lb. chicken

2 qts. water

2 tsp. salt

1 1/2 c. chicken stock

2 c. celery, chopped

2 c. carrots, chopped

1 tart apple, chopped

1 c. onions, chopped

Dash pepper

4 c. egg noodles

Place chicken in kettle with 2 quarts water. Cover until tender (about 2 1/2 hours). Remove chicken from kettle and strain broth. Debone chicken and return to kettle with strained broth. Add chicken stock, celery, carrots, apple, onions, and pepper and cook until vegetables are tender. Add noodles and cook 8-10 minutes.

Recipe #2 - AMISH CHICKEN - CORN SOUP

2 lbs. cut up chicken

5 c. water

1 med. onion, chopped

2 tbsp. chopped parsley

1/2 c. chopped celery

2 c. corn

Salt and pepper

1 c. flour

1 egg, beaten

1/4 c. milk

Simmer chicken in boiling water, remove bones and skin. Strain the stock. Return to pot, add onions, celery and corn. Simmer till vegetables are tender. Mix flour with egg and milk. Rub mixture with fork till it crumbles. Drop crumbs in soup. Cook 10 more minutes covered. Serves 3 to 4.

This time of year most of us are thinking of ways to keep warm. What could be better than recipes which come straight out of our grandmother's kitchen? Whether you are a star chef, culinary arts student, home cook or foodie your passion for delicious food most likely stems from childhood memories of grandmother's cooking. Who can forget the smells and tastes of the foods which came out of her kitchen? If you are lucky enough to have those childhood memories, you are very lucky!

Nowadays it is referred to as "comfort food" and it is just that. It is food that will comfort us and nurture us. Let's face it, at the end of our busy days all of us could use a little of both. For many it is easy to rush home from a busy day and throw something in the microwave for a quick meal to serve the family. But there is something about cooking up a pot of homemade soup and baking fresh biscuits which just can't be beat. It may take a little longer to get dinner on the table, but in the end it is worth it and your family will thank you for it. Perhaps the soup could be made on a Sunday afternoon and will be ready to eat come Monday. When the aromas of home cooking fill the air our bodies begin to relax and are soothed by it. So in a sense home cooking nourishes us in two ways: it nourishes our soul by soothing us and nourishes our bodies when it is eaten.

I don't know about you, but I love to reminisce about being in my grandmother's kitchen. Her country cooking style learned many years before as a child came second nature to her. She could whip up a pot of Vegetable Soup with Dumplings with no effort and bake a tray of Buttermilk Biscuits with her eyes closed! It was a treat to watch and of course, always a treat to eat in grandmother's kitchen! Wouldn't you love to create those kinds of memories for your own family? With that thought in mind, I want to share with you my grandmother's Vegetable Soup with Dumplings and Buttermilk Biscuits recipes. They are sure to warm your heart and your soul! Enjoy!

Vegetable Soup with Dumplings

Use a nice piece of shin meat with a marrow bone in it. Put the meat into a 4 qt. pot. Fill with water and cook until boiling. Turn down to simmer. Add all of the diced vegetables. I use everything, 2 carrots, a piece of turnip, 2 stalks celery, 1 large fresh tomato or ½ cup stewed tomatoes, 1 onion, 1 clove garlic, 1 bay leaf, 3 cloves, a few slices of cabbage leaves, some green pepper, a package of mixed frozen vegetables, 1 tablespoon salt and a dash of pepper. I also like to add 2 tablespoons barley or rice, whichever you prefer. Let it all simmer together for at least 2-3 hours. When it's done, add the dumplings.

For the dumplings: In a bowl mix 1 cup flour, a pinch of salt, 1 egg and enough water to make a stiff dough. Take a teaspoon and cut off ½ teaspoon size of dough and drop into the soup. Cook about 5 minutes until they rise and are done. Cut the meat into bite sized pieces and put back into the soup. Sprinkle a little chopped parsley on top before serving. This soup is a meal in itself.

Buttermilk Biscuits

Sift 2 cups flour, ½ teaspoon salt, 1 tablespoon sugar, 2 teaspoons baking powder and ½ teaspoon baking soda. Cut ½ stick (¼ cup) of butter into it with a knife or use your hands. Then add ¾ cup buttermilk. Blend into a ball. Roll out 1/2" thick. Cut into rounds using a cookie cutter or a glass. Bake at 400 degrees for 12 to 15 minutes.

3.> Vegetable Bean Soup

Vegetable and bean at a time can be served up to eight people.

Essentials --

- Cup of beans.

- Bucket full of white beans, salt.

- Two medium size onions.

- A peeled and coarsely chopped carrot.

- A bay leaf chopped coarsely.

- A cut of some rhizome.

- A bunch of chopped dill.

- Three leaves of cabbage.

- A cup of spinachLeaves.

- Three of endive leaves (leaves of endive and cut into thin slices to be shared. Leaf color is green).

- Black pepper.

- 1 cup of rice washed.

- Olive oil, to give a moist feel the shell is necessary.

- Parmigiano Reggiano and for use as condiments.

GUIDELINES FOR THE PREPARATION OF PLANT bean soup

Saturate dry beans in ice water for about an hour and then pull out of the water. Get a big bowl full of salt water and heat. ThenBeans, onions, carrots, celery and bay leaves. If the water boiling, reduce heat so the broth bubbles or fish soup. After 45 minutes check on the smoothness of the beans and if they are still stiff, then continue cooking until they are soft.

After the first trial, in dill, cabbage leaves and endive. With salt and pepper to taste. Boil the mixture on low about 30 minutes, put the rice and cook for fifteen minutes with the lid.Sprinkle with olive oil and cheese over and it is ready to serve.
