Beef Barley Vegetable Soup

Beef Barley Vegetable Soup

Ingredients:
1 (3 pound) Beef Chuck Roast
1/2 cup Barley
1 Bay Leaf
2 tablespoons Canola or Vegetable Oil
3 Carrots, chopped
3 stalks Celery, chopped
1 Onion, chopped
1 (16 ounces) package Frozen Mixed Vegetables
4 cups Cold Water
4 cubes Beef Bouillon Cube
1 tablespoon White Sugar
1/4 teaspoon Fresh Ground Black Pepper
1 (28 ounces) can chopped Stewed Tomatoes
Coarse Salt, to taste
Fresh Ground Black Pepper, to taste

Preparation:

1. Add beef chuck roast to crockpot. Cover and cook on HIGH for 4 hours.

2. Add barley and bay leaf to crockpot. Continue cooking 1 hour.

3. Remove the beef roast, cool for 15 minutes. Cut roast into small bite-size pieces.

4. Discard bay leaf.

5. Set the beef pieces, beef broth, and barley aside.

6. Add canola oil to large stock pot. Heat over medium-high heat.

7. Sauté chopped carrots, chopped celery, chopped onion, and mixed vegetables until crisp tender.

8. Add cold water, beef bouillon cubes, white sugar, fresh ground black pepper, chopped stewed tomatoes, and beef, broth, and barley mixture

9. Bring soup to a boil. Reduce heat to low and simmer 15 minutes.

You can train yourself to judge healthy portions over time. This is important, because once you know what a "serving" is, then you know how much you should be eating. For example, a serving of a steak is the size of the palm of your hand, and a baked potato to go with that steak is the size of a bar of soap.

When you eat out, ask for the entree menu, and order from that. If you choose to order from the standard dinner menu, then ask that half your plate be packed up so you can take it home with you. My husband and I have had a long and happy marriage. This year, to celebrate our 49 years together, we decided to go on a cruise. The Holland America cruise started in Venice, Italy and ended in Athens, Greece. While the food on board ship was spectacular, we also enjoyed eating at small restaurants in various ports of call.

One of my most memorable meals was in an Athens bistro locaked in the old section of the city, an area packed with small shops and restaurants. I ordered a simple meal of vegetable soup, bread, and white wine. The tomato-based soup had few ingredients: celery, carrots, zucchini, fresh tomatoes, and pasta. Interestingly, there were no onions in the soup.

I was amazed at the flavor of the soup, a flavor that exemplified the Mediterranean diet and conjured up images of Greek islands. Unlike American soups, which often have chunks of vegetables and meat in them, the vegetables were finely chopped. They had not been chopped in a food processor. A patient chef or Greek grandmother had chopped the vegetables by hand.

Athens has an ample supply of fresh, ripe, juicy tomatoes. Not so, in the Midwest, where fall and winter tomatoes tend to be pale and mealy. So I started with a can of low salt tomato soup. I chopped the vegetables finely and added enough water to cook them and the pasta. Because I eat a low-salt diet I did not salt the soup, but you may salt it to taste. My soup tasted just like the Athens bistro soup. You may feel like you are in Athens when you make this recipe.

VEGETABLE SOUP A LA ATHENS

INGREDIENTS

1 10 3/4-ounce can of low salt tomato soup

6 to 7 soup cans of water

2 cloves of garlic, minced (more if you are a garlic lover)

2 ribs of celery, finely chopped

2 carrots, finely chopped

1 zucchini, finely chopped

1 large beefsteak tomato (or 3 Roma tomatoes), finely chopped

3 tablespoons fresh parsley, coarsely chopped

1 teaspoon dried oregano leaves

1 1/2 tablespoons extra virgin olive oil

Salt and pepper to taste

1/4 cup orzo (rice-shaped pasta) or acini de pepe (peppercorns for soup) or stellini (little stars for soup)

METHOD

Combine all ingredients, except pasta, in a large soup kettle. Cook soup, uncovered, until the vegetables are tender. Stir in the pasta and cook for another 10 minutes. Add more water if the soup is too thick and correct the seasoning. Serve with crusty bread or saltines and an Athens tour book. Makes 8-10 servings.

The Easy Vegetable Soup Diet

A vegetable soup diet is an incredible way to both lose weight and pack your body full of nutrients. There's different approaches you can take to a vegetable soup diet. You can go all out and do an exclusive vegetable soup diet, or you can simply replace it with a few of your meals, which will cut down your overall caloric intake, while adding a horde of new nutrients to your diet you normally wouldn't get. Whichever way you go about your vegetable soup diet, it's important to keep a few things in mind.

Just buying canned vegetable soup from the store is not the way to go for a true vegetable soup diet. The sodium content is through the roof and the vegetable content is often weak. This can easily lead to bloating and a false sense of nourishment and nutrition.

Standard vegetable soup diet recipes tend to involve adding a lot of salt to the mix causing the broth to once again contain a high level of sodium. And many vegetable soup diet recipes call for potato's which have a relatively high glycemic index count which one may not want when their goal is to lose weight with the vegetable soup diet.

So whats the answer to going about creating the easiest, healthiest vegetable soup diet? Use a food processor and/or juicer. A good inexpensive option I've come across is the juicer put out by the fitness guru Jack Lalanne. This isn't a plug, it's just a relatively cheap machine that i've found kills two birds with one stone. And it's easy as you don't have to stand around and peel all your vegetables. Most of them you can just stick right in the machine. What happens is you get a puree juice from the vegetables, and you also get the left over "pulp" as well in a separate container. This makes it perfect for a vegetable soup diet. You get both the broth and leftover vegetable chunks at the same time. Now of course for your vegetable soup diet you can also add your own cut up fresh vegetables. I make a tomato soup this way and then throw in fresh broccoli and bits of green pepper. This is not only good, but amazingly filling for a vegetable soup diet! You can also add in some fresh herbs or spices and you have a very unique, tasty, and filling vegetable soup diet that you'd never find in a can.
